When putting together a portfolio for college admission review, what is your opinion on having the actual art work (matted), photographs of the art work (ie: chalk medium), or having pictures of that work in a digital format? How much of the portfolio should be created manually vs using computer software?

If you are presenting in person, use actual items where possible.
If its digital work, have hard-copies of any images in case their equipment cannot run your media--for whatever reason.
If you are mailing the stuff in ALWAYS send copies--NEVER send the originals.
Ever.
The medium you work in usually doesn't matter, it can be digital or traditional--but do heed whatever requisites the school asks for. If they want life drawing samples, providse copies of those from the traditional expected media-unless you are unusually skilled in some other media.
